It is easy to become so focused on brisket, ribs and burnt ends that barbecue sides turn into an afterthought. That is a mistake. In Kansas City, the supporting cast can be nearly as interesting as the smoked meat.
Barbecue beans
Beans are one of the classic companions. Recipes vary considerably, with restaurants adding their own combinations of sweetness, smoke, meat and spice.
Coleslaw
After several bites of rich barbecue, cool and crunchy slaw suddenly makes perfect sense. Styles range from creamy to sharper vinegar-based versions.
Fries and other favorites
French fries, potato dishes, bread and pickles commonly appear alongside barbecue, while individual restaurants often have signature sides that inspire their own loyal following.
Share everything
My preferred strategy is to order several sides for the table rather than giving everyone the same combination. You get to taste more without dramatically increasing the amount of food.
Do not fill up too soon
This advice is difficult to follow in Kansas City. Portions can be substantial, and the temptation to order one of everything is real.
Think of the sides as part of your barbecue comparison. Everyone argues about the best meat, but you may discover that the dish you keep talking about afterward was actually a tray of beans.
